| Inspired by a Pampered Chef recipe ...but I didn't have pecans. And I usually only like Pecan pie so cashew was a better fit for our family.
2 chicken breasts cut up 1/2 tsp salt 1/2 tsp cayenne pepper 1-1/4 C of cashews (crushed ) 1/2 C honey (I didn't really measure it out . just a guess on the amount on this) cooking oil (to coat skillet)
Cut chicken into strips. In small bowl mix cayenne pepper and salt. Cover chicken in mixture. dip chicken strips into honey and then roll in cashews. Cook in skillet on med high heat turn once while cooking. Should take a few minutes on each side.
Originally I used an egg wash but the cashew coating came off in the pan the honey worked better on the second try. It also gives hint of sweetness to it. Something we are keeping in our rotation of foods to cooks.
Next time I make these I am trying it in the oven. I prefer to bake vs. pan cooking or frying. | |

| ok so im so totally eating this rite now. and it is different but good. im dieting so i could not do the honey but i did the egg and baked it in the oven and the cashews still fall off but still it is very good. good one | |

| when I used the eggwash it didn't stick on the stove for me. that is why I used the honey. maybe crush up the cashews to powder like in a blender and see if that works a bit better. | |

| yea trisha the cashews didnt really stay on even when i baked it, but i just scooped some up ya know. i was trying to think if there was honey substite that we could have that would work. ill keep looking around and let ya know!!! | |
