Irish Potato Candy

I made these a couple years ago for Girl Scout Thinking Day(our country was ireland)

THEY ARE ADDICTING!!!!!!!!

Ingredients
1/4 cup butter, softened 1/2 (8 ounce) package cream cheese 1 teaspoon vanilla extract 4 cups confectioners' sugar 2 1/2 cups flaked coconut 1 tablespoon ground cinnamon
Directions
In a medium bowl, beat the butter and cream cheese together until smooth. Add the vanilla and confectioners' sugar; beat until smooth. Using your hands if necessary, mix in the coconut. Roll into balls or potato shapes, and roll in the cinnamon. Place onto a cookie sheet and chill to set. If desired, roll potatoes in cinnamon again for darker color.

store in an air tight container, keep cool(in fridge) so they retain their shape.

ohh I heard these are really good! Can't you make them with real potatoes??

i think there is a recipe for real potato ones.......but i used this one and it's easy peasy and YUM YUM!!

Its sounded good then I saw the picture and its just didnt seem that good. I'll have to try to make them one day

LOL Steph....potatoes are a staple food of Ireland, so the Potato Candy just resembles a lil spud, thats all....trust me if you can get over the sight of it--you'll enjoy the flavor.

I LOVE YOU!!!!!! Mike is Irish and I'm really into making these sort of things for him. He gets home soon and I'm totally making these. I've been trying to come up with something new and different and you have saved the day!
